This year for Christmas gifts for work colleagues, I decided to make Native Mini Cakes that I learnt to make at Cake Decorating Central at Castle Hill.  They are mini fruit cakes covered in fondant and topped with native Australian flowers made from sugarpaste.  I was happy with how they turned out
