Carrot Cake Cupcakes

Today I spent my day in the kitchen baking a carrot cake for my Dad’s 65th birthday next weekend.  I needed a cake and 2 cupcakes and I only had enough batter for the cake, so I had to make a second batch.  I ended up with some left over cupcakes so I made some butter cream and cut out some fondant blossoms to decorate them with.  I’m not very happy with the butter cream, I think I will do some searching for a new recipe that has shortening, or maybe I will try swiss meringue butter cream next time!
